Cooking with Liv presents her newest recipe, Roasted Yam and Beet Salad, paired perfectly with her Herb & Butter Whole Fryer Chicken.
Roasted Yam and Beet Salad
Ingredients:
• 2 yams, peeled and cubed
• 3 large beets, peeled and cubed
• 1 tsp paprika
• 1/4 tsp cayenne pepper
• 1 tsp garlic powder
• Salt and pepper, to taste
• 1/4 cup crumbled feta cheese
• 1/4 cup cilantro, chopped
Instructions:
- Preheat the oven to 375°F (190°C).
- Arrange the cubed yams and beets in a single layer on a large baking sheet.
- Drizzle with olive oil and sprinkle with paprika, cayenne, garlic powder, salt, and pepper. Toss to evenly coat the vegetables.
- Roast in the preheated oven for 50 to 60 minutes, or until the vegetables are tender, tossing halfway through for even cooking.
- Once roasted, remove the vegetables from the oven and allow them to cool slightly.
- In a large bowl, toss the roasted yams and beets with crumbled feta and chopped cilantro.
- Toss in 1-2 tablespoons of olive oil.
