Roasted Yam and Beet Salad

Ingredients:

2 yams, peeled and cubed

3 large beets, peeled and cubed

1 tsp paprika

1/4 tsp cayenne pepper

1 tsp garlic powder

Salt and pepper, to taste

1/4 cup crumbled feta cheese

1/4 cup cilantro, chopped

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Arrange the cubed yams and beets in a single layer on a large baking sheet.
  3. Drizzle with olive oil and sprinkle with paprika, cayenne, garlic powder, salt, and pepper. Toss to evenly coat the vegetables.
  4. Roast in the preheated oven for 50 to 60 minutes, or until the vegetables are tender, tossing halfway through for even cooking.
  5. Once roasted, remove the vegetables from the oven and allow them to cool slightly.
  6. In a large bowl, toss the roasted yams and beets with crumbled feta and chopped cilantro.
  7. Toss in 1-2 tablespoons of olive oil.
